Heavenly pecan cranberry scones!
Hello Everyone!
I'm back!
My grandmother is back home, thank goodness, and I welcomed her back with my favorite things in the world... Warm scones.
I am happy to report that I barely hear the oven tick anymore. Is like my baking soundtrack. My grandma gave us a scare, but she's a trooper! My mom is full blown sick. And aside from a four day headache, I resumed well and light hearted. My mojo baby is still here. Sorry to boost myself. But, I love scones and to make a good scone is awesome! That means I can have them anytime I want. Wait, thats not really that good. LOL- I'll settle with the power of knowing I can have them anytime I want. Yum!
Here's the pic. I wish you guys can smell my apartment when I bake. It makes me feel so at peace. It's going in the jar of "my favorite smells".
LOl- My good friend Leti, can't taste them cause she's doing a cleanse. Sorry buddy I'll hook you up next time. Everyone else was smitten by my scones. Happy to report, they all want more.
Until next time.

The Lemon Bar made of pure love!
Hello Everyone!
After I thought I had the first baking disappointment with the chocolate oats pecan bar, and was proven wrong. I woke up this morning determined to make something special. Wow! little did I know that I was going to shock myself. This is a Lemon Bar. It has a flaky crust and moist tart and sweet filling inside. The construction of this tart was what shocked me. I never thought I could produce something that balanced in appearance, and the taste blew my mind. I was really impressed with my baking skills, that I never knew I had.
The cherry on top! People came by through out the day and I gave them a slice. Everyone that had a bite was just as impressed as I was that I made it, and that it taste so good. They were asking how I made it? How I made it sweet and lemony at the same time? My cousin kept saying, "Wow! OMG! Wow!" I told her that she was gassing me. She said. "... be gassed yo, cause this is good!
And finally, my father's best friend came by and I gave him some of the chocolate oats pecan bar, the Pecan crescent cookie and the Leman bar, and he was floored! He said I should definitely go into business and that I found a client in him.
YEY!!!
A Buen Tiempo!

Chocolate Oats Pecan Surprise!
Hello Everyone!
Last night I was upset. I came home from a long day and I was tiered, but I didn't want to skip another day of baking. So I attempted my first chocolate little something. Chocolate oats pecan bars. Long name! A lot of ingredients! LOL- After I was done I felt I had messed up. They tasted good but I felt that I didn't put a lot of love into it, because I was so unfocused and tiered. It was late when I finished so everyone had a chance to taste them today. They were floored! Everyone was saying how perfect it was. "Not too much chocolate, and not to sweet". I was shocked! I thought it was my first disappointment. To my surprise I was all in my head about how wrong it was because I broke my one and only rule, to bake with love. I didn't notice how much love went into being committed to baking and I just focused on all the little brake downs last night. The proof is in the pudding...In this case the chocolate oats pecan bar. This is not a brake down but a break through.
Thanx for listening.

Life got in the way of baking!
Hello everyone!
I had a day full of little busyness and I had to work tonight so no baking. I promise a new dish for tomorrow. Looking forward to gifting some baked goods to my good friends Luis who has an up coming B-Day bash this saturday.
FYI: I think I'm going a bit deaf. After baking the successful Pecan Crescent Delights for 4 hours, the constant beeping from the stove's burned out pilot torch has left me a bit muffled. All day I felt like I was listening to people from inside a pool. LOL! All better now tho. Can't wait for tomorrow.
Yummy dreams!

Pecan Crescent Delights
This was supper fun and I am so happy they turned out great! Round two, my family and friends are supper impressed. It took me 4 hours to make about 72 cookies in a very challenging kitchen, and the ambiance of a ticking oven. I love that everyone is asking for more, and everyone is enrolled on helping me in this new quest.
So what started as something challenging and fun to do, has become a business. I have my first potential client asking me for samples of my recipes so far. With two under my belt and the great reviews flowing from the toughest critics turn number one fans... My family. I am taking this on! The number one complaint from my testers is, "We want more!" More they shall have.
A buen tiempo!

Round Cheese Bread and the oven that won't light up!
Hello everyone!
I did it! It was a bit challenging since my kitchen is not equipped for baking, but I made a Round Cheese Bread with mozzarella, parmesan and a hint of oregano.
I got home around 8pm and I was supper excited to bake. See I want to open a Cafe in the Dominican Republic and it almost felt impossible until I got this idea to put it in motion. I started talking to some family members about this idea of mine, and now my aunt and sister are really enrolled and want to take part in it.
So with them on my side I went down to Barnes and Nobles and picked out a baking book and decided to teach myself how to bake! Now, I've baked a simple cake from a box before, but I can't say it has always been successful.
The kitchen! It took five of us to get the oven running. Five! My father, my cousin, my mother, my sister and me. Five people. We took it apart. We burned like 3 paper kitchen towels trying to light it up, and when that wasn't successful, we decided to plug it in. The catch see is that we unplugged it once before because for some reason it has this annoying tick while it's plugged in, and the cherry on top, an overwhelming stench of burning rubber from the lack of use.
But once the oven blew the biggest flames I've ever seen, my fear moved from, OMG let me not burn this apartment down, to OMG I have to actually bake now.
But all the worries for nothing. The bread went in, and it did its magic. We let it cool, took a quick pic, and I started to serve it.
I was elated to hear that my family liked it so much. One by one they started saying how balanced it was in flavor, how soft and moist inside it was, yet crunchy outside.
Just so everyone knows, my family isn't the easiest crowd to please. Even though they were helping me light up the oven, they were so annoyed by me and skeptical that I could even do this, that I think it really surprised them and they were genuinely honest.
So to hear them say it was good. No,great! It makes me supper happy. When I asked my grandma what she thought? she said, "I am so satisfied and pleased, I loved it!"
See to me, that right there, is the compliment of champions!
It has been a while since I've felt challenged and excited by something. Let's see what adventures the oven bakes tomorrow.
Good night!
